Ageing

Our cognacs age in our warehouses during many years.

The ageing process comes in two parts. First, the cognac is stored in new Limousin oak barrels, for one year, then its transfered into old oak barrels. This long maturation allows to our cognacs to develop a lot of aromas.

During this ageing, it produces a slow evaporation, called poetically « La Part des Anges » and it is an essential element for the aromatic development of our cognacs.
